We like the appearance of this with its golden brown hue. There's a lovely level of viscosity. The aroma is very natural and quite vegetal - not perhaps the most appealing but really intriguing. We loved the well defined layers of flavour including florality, caramel and beautifully judged natural sweetness. There was also a really good mouthfeel. We wish the whitethorn blossomed every year!
Super pale amber colour and unusual, savoury, almost cheese-like aromatics. We struggled to describe this flavour - deep and resonant, barley-sugar with a mildly astringent edge that carried it into a long lasting delight on the palate. That savoury note was behind the main surge of flavour, with richer peaks coming through in exciting little points. What a delicious honey.
A very pale amber coloured honey with a good runny consistency. The aroma is almost medicinal and almost cheesy but we liked it. The flavour is intense and woody and lasted long in the mouth. This is an unusual intensely flavour honey that we enjoyed.
What wonderful provenance. This sticky honey is crystal clear and pale golden. It does have a unique aroma - woody, like hedgerow after a shower. Some of those woody elements come through on the palate with a hint of citrus, and the flavour, although not intense, does linger in the mouth without cloying. It would be good on toast, or drizzled on porridge or yogurt. This is an unusual and enjoyable honey.
