Ivy Blossom Honey
This honey is chewy and creamy and absolutely intoxicating on the flavour front. There is the bitter depth of winter, the romance of spring, the seduction of summer and the vibrance of autumn all rolled into one. The flavour lingers for what seems like an eternity.
A rich, creamy, dense looking honey with a sweet, floral aroma. The creamy but light texture is releasing a complex and excitingly intense flavour rich with berries, floral notes and waves of flavoursome sweetness that are full of the interesting environment these bees have been working. A highly individual honey that has fabulous layers of flavour with remarkable length.
This is very creamy textured and chewy in the mouth. There are distinct floral aromas with a fragrant taste reminiscent of Parma violets.
We did not anticipate the creaming process adding to the character of already unique and uplifting ivy honey - but here it does so, ensuring immediately complex, entrancing aromatic impact even before tasting. The palate delivers the anticipated menthol uplift, but the creaminess here amplifies and prolongs this, while gently releasing floral notes that reminded one judge of violets. The florality fills the senses with increasing abundance, helped in no small part by the palate persistence ensured by the fudgy, creamed texture. This is genius, and utterly delightful.
